Vegetable Pulao with Foxtail Millet

Ingredients

1 cup Foxtail millet
1/2 cup Beans
1/2 cup Diced Carrot
1/2 cup Cauliflower Florets
10 gm Fried Onion
Salt to taste
5 gm Chopped Mint leaves
5 gm Chopped Coriander leaves
10 ml Oil or Ghee
5 gm Whole spices ( Cinnamon stick, Peppercorn, Cloves and Mace)
5 gm Turmeric

Method

Soak the foxtail millet for 30 minutes after washing it well.
In a pan boil the millet till cooked.
Once the millets are drained, add oil or ghee and heat.
Add the whole spices and allow it to splutter.
Add the turmeric and then add the vegetables.
Saute for a while and then add enough water and salt to cook the vegetables through.
Once the vegetables are cooked, layer the vegetables and the cooked millets alternatively.
Top with brown onion, mint and coriander leaves.
Cover with a lid and cook on a very slow fire for 5 minutes.
Open and mix the layers.
Serve Vegetable pulao with foxtail millet along with raita
