Nasi Goreng

Why you should make this recipe:

Nasi goreng literally meaning “fried rice” in Indonesian. It is a rice dish with pieces of meat and vegetables It can refer simply to fried pre-cooked rice, a meal including stir fried rice in a small amount of cooking oil or margarine, typically spiced with kecap manis (sweet soy sauce), shallot, garlic, ground shrimp paste, tamarind and chilli and accompanied by egg, chicken and prawns.

Ingredients

For rice preparation:

  • Basmati rice – 2 cup
  • Prawn – 300 gm
  • Chicken – 300 gm
  • Egg -12 no
  • Vegetable oil -10 tabs
  • Garlic chopped – few
  • Onion chopped -1 cup
  • Shrimp paste -8 teaspoon
  • Sambal oelek -8 teaspoon
  • Sweet soya sauce -5 table spoon
  • Spring onion -1 cup
  • Seasoning powder -8 teaspoon
  • XO sauce -8 teaspoon

Thai chicken Satay:

  • Chicken thigh cubes – 500 gm
  • Ginger garlic paste – 2 teaspoon
  • Lemongrass chopped – few
  • Kaffir lime leaves -few
  • Galangal chopped – few
  • Coconut milk – 1/2 cup
  • Peanut butter -3 teaspoon
  • Yellow curry paste -2 teaspoon
  • Lemon juice -1 No
  • Oil – 3 tablespoon
  • Salt -to taste
    Pepper -to taste

Peanut sauce:

  • Roasted peanut – 1/2 cup
  • Yellow curry paste – 3 teaspoon
  • Lemongrass chopped -few
  • Coconut milk -1/2 cup
  • Peanut butter – 2 tablespoon
  • Galangal chopped -few
  • Oil – 3 tablespoon
  • Salt – to taste

Method

For rice preparation:
Method:

  • Heat oil in wok add garlic, onion and sweat for sometime
  • Add Prawn, chicken and egg cook for a while
  • Now add shrimp paste, sambal oelek and soy sauce to the mixture
  • Add the precooked basmati rice to the mixture and cook for some time
  • Finish with seasoning powder, Xo sauce and chopped spring onion.

Thai chicken Satay:
Method

  • Marinate the chicken cubes with all the ingredients from the chicken satay overnight.
  • Arrange 4 to 5 pieces in the bamboo skewer
  • Heat oil in the non-stick pan and place chicken skewer to sear all the sides

Cook the chicken completely and keep aside for plating.

Peanut sauce:
Method:

  • Heat oil in a pan and add lemongrass, galangal sauté for some time
  • Then add yellow curry paste, cook for a while and add coarsely grounded roasted peanut
  • Cook slowly until the raw flavor of yellow curry paste goes off
  • Add coconut milk and cook for some more time.
  • Finish the peanut sauce with little peanut butter.

Finishing:

  • Make fried rice and place it in the soup bowl
  • De-mold the rice bowl on the left corner of the square plate.
  • Remove the soup bowl
  • Prepare one sunny side up egg on place it on top the fried rice and garnish with fries onion and coriander sprig
  • Place the chicken satay two bamboo skewers below the fried rice
  • Place one bowl of peanut butter sauce opposite to fried rice and keep some prawn crackers as shown in the picture
