Kuttanad, it means the backwaters. It is such an amazing place to go for a house boat ride, where you see just kilometers and kilometers of water.. One night, I really wanted to make something different with chicken and somehow “Kuttanadan Chicken Roast” was continuously echoing in my mind…first we marinate the chicken and shallow fry it..then sauté all ingredients & add fried chicken…. the flavour of coconut oil is amazing when we cook the chicken…it will go along with rice, parotta..etc
Ingredients
For marination
Chicken – 500 gm
Kashmiri chilli pwdr – 2 tsp
Chilli pwdr – 2 tsp
Turmeric pwdr – 1/4 tsp
pepper pwdr – 1 tsp
Ginger & garlic paste – 1 tbsp
Garam masala – 1/2 tsp
Salt – to taste
Coconut Oil – little for marination
For masala
Onion – 2 no’s
Tomato- 1 no’s
Green chilli – 2 no’s
Curry leaves – few
Coconut oil – 3 tblsp
Ginger & garlic paste – 1 tbsp
Kashmiri chilli – 2 tsp
Chilli pwdr – 2 tsp
Turmeric – 1/4 tsp
Pepper pwdr – 1 tsp
Garam masala – 1/2 tsp
Salt – to taste
Method
Marinate chicken will all masala keep it for 1 hr or more.
Shallow fry the chicken in coconut oil & cook till 80% done.
In a pan add coconut oil & sauté onion, curry leaves & green chilli.
Sauté till onion gets golden brown colour, add ginger and garlic paste .
Add tomato & cook well, after that add all dry masala & little water.
Add fried chicken into the masala & Cook for 15 minutes & make it dry..
