Vegetable Kolhapuri

During my college days I went for training to Mumbai. Usually when I get a day off I visit restaurants and get to explore new cuisine.. In one place I came across this Special menu called Vegetable Kolhapuri … I have heard about Kolhapuri chappals but this was quite interesting.. I got to taste the dish and it was amazing.. So I tried this at home and came out really well. A must try recipe for veg lovers.

Ingredients

For masala paste
  • Grated coconut – 4 tbsp
  • Dry red chilli – 3 no’s
  • Cardamom – 4 no’s
  • Cumin – 1 tsp
  • Fennel – 1 tsp
  • Poppyseeds – 1/2 tsp
  • Coriander – 1 tbsp
  • Cinnamon – 2 stick
  • Peppercorn – 2 tsp
  • Cloves – 6 no’s
  • Water – as required
For gravy
  • Onion -1 no’s
  • Tomato – 2 no’s
  • Cashew nut – 10 no’s
  • Onion – 1 no’s (chopped)
  • Oil – as required
  • Cumin – 1 tsp
  • Ginger and Garlic paste – 1 tbsp
  • Turmeric – 1/2 tsp
  • Coriander pwd – 2 tsp
  • Kashmiri chilli pwd – 2 tsp
  • Salt – to taste
  • Coriander leaves – few
  • Butter – 1 tbsp
  • Carrot – 1 no’s
  • Potato – 1 no’s
  • Cauliflower – few
  • Beans – 10 no’s
  • Capsicum – 1/2
  • Paneer – few cubes

Method

  • Sauté all dry ingredients & add grated coconut.
  • Roast it till it turns golden colour.
  • Add little water & make smooth paste.
  • In a pan sauté the vegetable & keep aside
  • Sauté onion, tomato, cashew nut, add water & cook for 10 minutes & grind into smooth paste.
  • In a pan add oil, cumin, bay leaf, onion & sauté well.
  • Add  the ginger and garlic paste, dry masala, water & cook well.
  • Add tomato & onion puree, cook well & add coconut masala paste.
  • Add sautéed vegetables, paneer & cook for 10 minutes.
  • Serve with white rice & Indian breads
