Chicken Dum Biryani

My all time favourite is chicken biryani. From childhood I always crave for my mom’s biryani and on special occasion we make and enjoy.

Ingredients

  • Basmati rice – 4 cup
  • Water – 6 cup (hot water)
  • Chicken – 1 1/4 kg
  • Ghee – 3 tbsp
  • Oil – 3 tbsp
  • Onion – 6 no’s
  • Tomato – 6 no’s
  • Mint – 1 cup
  • Coriander – 1 cup
  • Curd – 3 tbsp
  • Ginger & Garlic paste – 2 tbsp
  • Chilli powder – 3 tsp
  • Green chilli – 3 to 4 no’s
  • Salt – to taste
  • Cinnamon – 1 stick
  • Cloves – 8 no’s
  • Cardamom – 6 no’s
  • Bay leaf – 2 no’s

Method

  • Add oil, ghee, whole spice, onion, green chilli & sauté well
  • Add ginger & garlic paste cook well, add tomato & sauté well
  • Chopped mint & coriander sauté well & add chilli powder
  • Add chicken, salt, curd, lemon juice & mix well.
  • Pour water & cook chicken till 70% done.
  • Add 1/2 hr soaked rice & mix well.
  • When water reduce, sprinkle some coriander & mint leaves.
  • Keep Dum for 5 minutes in high flame & slow flame in 15 minutes.
  • Serve hot & garnish with fried onion & nuts.
